I know you though I had forgotten about my blog

Well I have had a lot on my mind lately and I probably should have been on here writing about all of it so I wouldn't get depressed and cry as much I have been doing lately. You know my kids are all grown but it doesn't change the fact that I would like to give them all a little something for christmas but I don't know what it is going to be I don't have a lot of money and I don't have a lot of time. I just got to get my brain working and figure out what I can get all of them or make for all of them....

Oh yeah I have a job interview on wednesday at universal studio wish me luck......

Hot flashes suck....

I am truely not enjoying these hot flashes they have been worse over the past month or so . So bad that if the ac is not running all the time I am sweating and not able to sleep or anything. I sure wish they would go away............

OOOOOOOOHHHHHHH carrot cake

This is what I made yesterday and they are easy to make.

Carrot Cake (muffins or just cake)

1 box Duncan Hines Decadent Carrot Cake Mix
1-8ounce crushed pineapple
3 eggs
1 cup warm milk or  heavy cream
1/4 cup softened unsalted butter

Preheat oven to 350 degrees.
Empty the package of carrot & raisin mix into bowl and cover with warm milk.
Empty cake mix into bowl add crushed pineapple with juice, eggs, butter and mix.
Add carrot, raisin and milk mixture and mix by hand about 50 strokes or until well blended.
Now if you are making cup cakes (which I prefer because of individual serving size) put papers in muffin pans and fill half way with batter. Bake for 25 minutes. If you are baking in layers remember to grease and flour your 2 layer pans and divide batter between pans. Bake for 25 minutes.

Cream Cheese Frosting

4 ounces of cream cheese softened
1/4 cup softened butter
1 pound powder sugar
1 Tablespoon milk
1 teaspoon vanilla
orange coloring (optional)

Mix all ingredients until smooth. Frost cakes when completely cool.

They are really good and really simple and make a great homemade snack for after school or to take in lunch. Hope everyone enjoys. Have a good day.

Off to Michaels today

Well I am up drinking coffee and waiting patiently till time for Michaels to open. I have to make a trip to look for a specific color crochet thread hope they have it JoAnns didn't have it yesterday. Everyone is off from work today so I guess I will work all day feeding them and finding different things for us to do. Does anyone else feel like the planner for everyone elses day off?
When my hubby is off all he seems the think about is what do I want to do, that is easy I want to work on some of my craft projects. but he doesn't want too so i have to change my whole day for him. So a day after michaels of entertaining him.

taking it easy and relaxing on sunday

I have been just taking it easy today went to church this morning and then since everyone else is at work I decided to make me some instant mash potatoes for lunch but not just any it is my own recipe.

Blue Cheese Mashed Potatoes
serves 5

1 1/2 cups water
3/4 cup milk or cream
2 tablespoons butter
2 green onions chopped
1/2 cup crumbed blue cheese
1 3/4 cups instant mashed potato flakes
salt & pepper to taste



Bring water, milk, & butter to a simmer. Remove from heat add blue cheese and stir till melted. Add potato flakes, salt and pepper.

Easy but so delicious

It is a good morning........

My daughters bag was returned with everything still in it and she was so happy. I don't know why nothing was taken but thank you God for answering that prayer.

I am in the middle of brain storming a new craft idea for my shop.....not giving out any info but will keep everyone posted when i am ready.............. wish me luck that this is that item that will help me get a little money coming in........ sometimes ideas come from the strangest places.....lol.

Losing your identity

Well my youngest daughter who is 18 lives with us and had her purse stolen this evening. Needless to  say it has been a very tramatic experience for her. It has also brought back memories of when someone broke in the place where my hubby and i were staying 24 years ago. My daughter had the keys to our place and her id with our address in her bag that was stolen so now i am really uncomfortable. Not sure whether I will be able to sleep tonight or not. Oh well.............

My new sewing maching

I picked up my new sewing machine today. I have been without one for almost 2 months. It is exciting to have my new machine. I have been playing with it trying the stitches out and seeing how it sews. It wasn't an expensive one but it is one that will do the job I need it to do. I hope I can  get somethings made to add to my etsy shop, that would be great.

Without a Job for 6 months

Well it has been 6 months since I was laid off, and it doesn't get any easier. I have started this blog so that I can share my experience as I reinvent myself so to speak. I have been looking for a job everywhere and no luck no one will even call me back so I am kinda getting upset. Am I too old? I don't think so but who knows what their opinions of that are. I would think it would be a plus to hire someone with experience but I guess it isn't. I think I got the most upset when my daughter applied for a job online and was hired 2 days later. I almost got sick but I got over it.

So now what to do, I guess I am going to start blogging and working more on my etsy shop and getting things going to be self employeed.
